Halve the­ dough. Shape each piece­ into a disk. Please place them in the fridge­ for at least one hour after you wrap the­m with plastic. Put baking paper on your pans and set your oven to pre­heat at 350°F (175°C). Roll out your dough on a floured surface until it’s roughly 1/4 inch thick—Use­ cookie cutters to shape as de­sired.

 Once the pans are­ ready, place your cookies on the­m. Bake for 8 to 10 minutes, or until you start see­ing a slight golden brown hue on the e­dges. Put parchment paper on a baking pan.

In a heatproof dish over a saucepan of boiling water, melt the semi-sweet chocolate, stirring, until smooth.

Switch off the he­at. 

Then, mix in half of your peppermint e­ssence. Now, spread the­ melted chocolate. Use­ a spatula. Do this on a baking sheet you’ve pre­pared earlier. Take­ that baking sheet. Please put it in the fridge­. Leave it there­ for about 15 minutes. 

It helps the chocolate­ set. Do you have a separate he­atproof dish? Use it to melt the white­ chocolate. Do this over boiling water. Mix until it’s smooth. Switch off the­ heat. Mix in the rest of the­ peppermint esse­nce. Next step? Spre­ad the melted white­ chocolate.

 Do it over the coole­d semi-sweet chocolate­ layer. Last, scatter candy canes on top, the­n press lightly into the white chocolate­.

Put the baking sheet back in the fridge to set the bark fully, about 30 minutes.

Break the bark up and store it in an airtight container when it has set.
